Dacă doriţi o mini-vacanţă de toamnă, dar la temperaturi de vară, puteţi alege o insulă cu adevărat deosebită: Pantelleria.

O insulă numită de localnici ”insula vânturilor” care te fascinează cu pământul său plin de pietre şi în acelaşi timp roditor, cu casele de culoare roz - gălbui, case mult diferite ca structură faţă de cele din teritoriul sicilian şi cu grădinile în stil ”panthesco”.
Sicilia este înconjurată de mai multe insule mici, precum grupul insulelor Liparice în partea de nord-est, insulele Egadice pe partea de vest şi insulele Pelagice în partea de sud-vest.
Pantelleria face parte din lanţul insulelor Egadice, fiind şi cea mai mare – cu o suprafaţă de 83 de kilometri pătraţi de coline şi vârfuri negre de obsidian. Insula înregistrează un număr de aproximativ 8000 de locuitori dintre care 2000 sunt cetăţeni români.
Grădină pentru un lămâi
Situată în mijlocul Mării Mediterane, mai aproape de Africa decât de teritoriul italian (112 km de Siclia şi 70 faţă de nordul Africii), Pantelleria este opera unui vulcan stins cu mulţi ani în urmă. Pe deasupra mâinile omului au construit în timp tot felul de ciudăţenii, pentru noi, orăşenii de rând. Un exemplu ar fi grădinile ”panteschi” (construcţii cilindrice, în piatră) în număr de aproximativ 500 pe insulă, dintre care doar 350 au fost renovate.
Aceste grădini sub forma unui turn fără tavan, înconjurat de un zid rotund de piatră, gros de 1,5 m, cu diametrul 9-11 m şi înalt până la 4 metri, cu o singură minuscula uşă protejează un copac: fie un lămâi, fie un portocal. În unele astfel de grădini există şi o băncuţă.
Pe vremuri, insula ducea lipsă de fructe, de vitamina C. Din acest motiv, localnicii erau nevoiţi să folosească vitaminele din lămâi şi portocale.
Pentru a proteja fructele de vânturile puternice şi de soare oamenii au ales să izoleze în acest mod copacii, consideraţi o farmacie.
Armani are ca şi casă de vacanţă un dammusi
Casele localnicilor sunt cu mult deosebite faţă de cele din teritoriul italian. Casele tipice, numite dammusi, sunt, evident, din piatră şi construite fără temelie, puţin cam rustice pentru aceste timpuri.
Au acoperişuri bombate în aşa fel încât în interior căldura să se adune în concavitatea de sus şi restul camerei să rămână răcoroasă.
La exterior această cupola împinge orice picătură de ploaie într-o cisternă subterană. O astfel de casă şi-a cumpărat cu 25 de ani în urmă şi renumitul Giorgio Armani, un dammuso unde vine în fiecare vară pentru a-şi petrece o parte din vacanţă. Localnicii ştiu că marea vedetă se află pe insulă atunci când în port se vede yahtul său
O insulă care trăieşte cu vânt şi fără ploi
Pantelleria este numită şi ”insula vânturilor”, deoarece aceste vânturi se fac simţite pe toată durata anului, chiar şi în zilele toride de vară. Surprinzător este că deşi plouă foarte rar, pământul este roditor. Din cauza forţei cu care bate vântul uneori, plantele sunt cu adevărat înrădăcinate în piatră.
Astfel dacă încerci să rupi un fir de iarbă, lejer, constaţi cu uimire că îţi trebuie mai multă forţă ca să poţi face asta. O problemă cu care se confruntă localnicii este cea a apei potabile, care de cele mai multe ori este adusă din Sicilia.
Ca turist, chiar dacă nu poţi face plajă la Marea Mediterană, nefiind nici un petic de nisip, ci doar stânci, poţi înnota şi sta la soare liniştit pe malul Lacului Specchio di Venere sau poţi beneficia de o saună în aer liber, naturală, Benikulà, sau poţi vizita peştera Ulisse.
Insulă renumită şi pentru ”Passito di Pantelleria”
Pe de altă parte Pantelleria este cunoscută şi pentru vinul său, mult diferit faţă de celelalte soiuri din Sicilia, asta deoarece pe insula vânturilor se cultivă în special strugurii Zibibbo, un tip de strugure cultivat de pe vremea fenicilor.
Din aceşti struguri se produc două vinuri. „Moscato”(Muscatul) şi „Passito. În anul 1977 „Passito di Pantelleria” a obţinut denumirea DOC.
Producătorii de pe insulă acordă o mare atenţie culturii de struguri şi procesului de fabricare a vinului. Strugurii se culeg numai atunci când boabele sunt coapte obţinându-se un must dulce. La acest must nu se mai adaugă zahăr, pentru că este deja un vin de desert.
Ca gust este o îmbinare între aroma smochinelor, mierii şi a fructelor. Are culoarea ambrei, o gradaţie alcoolică de 20 grade şi se serveşte la o temperatură de 100-120 C.
La bucătărie - numai produse naturale de Pantelleria
Cu greu găsim astăzi un loc în care să mănânci totul făcut ca acasă, în grădina ta, pe pământul tău. La Pantelleria, localnicii ţin foarte mult ca produsele pe care le pun pe masă să fie culese de pe insula lor.
Nu contează că este vorba de vin, sau de castraveţi, vinete, smochine sau brânză – totul trebuie să fie de pe insulă.
Această regulă se respectă chiar şi în cazul restaurantelor, unde mai ales pe o insulă atât de mică rişti să îţi pierzi clientela, dacă de exemplu, nu găteşti natural şi în acelaşi timp în stil pantesco.
Alessandro Gabrielle de la Trattoria ”La Favarotta” recunoaşte că o parte dintre aceste mâncăruri tradiţionale se găsesc şi în Sicilia, însă la Pantelleria au un alt gust.
”Marea diferenţă este că aici sunt folosite produse care sunt cultivate pe insula noastră.”Caponata” - zacusca este o mâncare tradiţională de Pantelleria, care se găteşte din vinete, ceapă, ţelină, caperi şi oţet.
Alte feluri de mâncare: sarmale de peşte spadă cu pâine cu migdale, vinete făcute la cuptor cu lemne, salată pantesca – făcută din roşii, ceapă, cartofi, măsline şi caperi, desigur caperi de Pantelleria, salată de caracatiţă, care este o altă mâncare tradiţională – asta şi datorită faptului că suntem chiar în centrul Mării Mediterane, omletă de cartofi cu migdale. Aş spune că sunt mâncăruri sărace, dar cu gusturi deosebite” povesteşte Alessandro Gabrielle.
Cous cous de Pantelleria – mâncarea ţăranului
”O altă mâncare importantă la noi, foarte cunoscută în lume – este cous cous cu verdeţuri, care se găteşte din tărâţe, vinete, dovlecei, morcovi, mazăre, o mâncare cu o mare vechime. Pe vremuri ţăranul venea la prânz de la culesul de struguri şi mânca numai acest cous cous. După care se întorcea la muncă.
Era ca o mâncare unică şi foarte uşoară. Mai avem brânză de Pantelleria – ”la tuma” se numeşte - care este făcută din laptele de dimineaţă al vacii şi care se poate mânca imediat, proaspătă. Nu este nimic deosebit. Este o bucătărie lejeră, în care predomină verdeţurile” explică din nou proprietarul de la Trattoria ”La Favarotta”.
Italianul mai precizează că la ei, pe insulă caperi au un gust deosebit, diferit de cel din Sicilia.
”De exemplu, dacă roşiile din Sicilia au apă la discreţie, roşiile de la Pantelleria cresc pe un pământ foarte roditor, dar fără nici un strop de apă. Noi le plantăm, după care ele cresc singure, deci sunt autentice, sunt sănătoase, ceea ce se poate vedea şi de la culoarea minunată pe care o au” mai explică Alessandro Gabrielle.
În materie de dulciuri, şi insula Pantelleria, la fel ca şi Sicilia, are o paletă de oferte: ”bacio pantesco” (un fel de gogoaşă prăjită umplută cu urdă dulce), ”pasticiotti” (tarte mici), ”mostaccioli” (fursecuri de mai multe forme) şi "ravioli con ricotta", dar desigur şi canoli, casate siciliene, torturi cu ricotta (brânză dulce), făcute însă numai cu produse de pe mica insulă.
Șuncă de Pantelleria spălată în apa Mării Mediterane
Alessandro Gabrielle ne mai povesteşte de un produs deosebit de pe insulă: prosciutto di Pantelleria (şunca de Pantelleria).
”Carnea de porc se pune în sare, în saramură. Unica soluţie pentru a salva carnea de caldură este conservarea cu sare. Se ţine în saramură pentru două - trei luni, după care este dusă la mare, unde este spalată cu apă de mare. Cum este foarte sărată, apa de mare dezinfectează carnea, devine ca un conservant pentru şuncă. După aceea carnea este spalată şi pusă în ziare, în hârtii mai groase şi este lăsată la uscat pentru alte trei - patru luni” explică procesul de prelucrare a produsului: prosciutto di Pantelleria, Alessandro Gabrielle de la Trattoria ”La Favarotta”.
